Crockpot Sweet Potato & Chickpea Coconut Curry

I don’t know about you but I always look forward to fall around this time of year. We’re in August now and I’m just kind of over summer at this point. Don’t get me wrong, I LOVE the summertime but I just feel like I’ve enjoyed it as much as I’m going to and I’m ready for the cooler weather, foliage colors, big sweaters and of course.. pumpkin everything. Yes I’m one of those girls.

Peanut Butter Black Bean Brownies

First of all, I feel like I should confess that while I’m typing this post, I’m also watching National Lampoon’s Christmas Vacation. It’s just one of those Christmas movies that I have to watch every year along with A Christmas Story, Elf and The Grinch. I’m typically not a huge movie person but when it comes to Christmas movies, I could watch them all day.
