Please tell me I’m not the only one that completely stuffed their face last night.. And when I say stuff my face I mean I could not even control myself. I was like an unsupervised kid in a candy store. I think it’s because I’ve been so good lately and have been really trying to be stricter on myself in what I eat. I told myself that last night would be my cheat meal and that I deserved it. And I took FULL advantage of it. But thats okay. It was back to the grind this morning and I was fully okay with it.

Buffalo Blue Cheese Chicken Meatballs

If you’re like me you are more concerned about what appetizers you’ll make for the Superbowl then the actual event itself.. I’ll admit it. Now if the Panthers were playing it would be a different story. But they’re not so let’s talk about these meatballs. It’s like everything you love about a hot wing. The spicy buffalo sauce, tangy blue cheese and carrots all in one little bit sized treat! They actually taste like they should be bad for you. That’s how good they are. But the best part is there’s less than 40 calories in each meatball and they’re pretty filling. The most I could eat in one sitting is 4 and I was pretty full after that.

Our Savannah Getaway!

I promised I would talk about Savannah this week and share all my photos so that’s is exactly what I will do! I had to sort through the massive amount of spanish moss photos to find the handful that I thought were the best. I just love spanish moss. And I loved everything about Savannah. It was such a fun city!! Everyone was so friendly and of course the food was on point. Not to mention the absolutely gorgeous scenery. I think my favorite part was all of the squares at almost every block. Every square was like it’s own little garden or sanctuary with usually some kind of historical monument or history behind it.

Clean Peanut Butter Banana Oat Muffins

You need to make these muffins. Right now. That is if you happen to have four brown bananas on hand… it’s funny because once I realize we have bananas that are going to go bad soon I use it as an excuse to make some kind of banana bread or muffins. Typically I make a healthier version of chocolate chip banana bread (very similar to this recipe) but in an effort to keep it a little cleaner I omitted the chocolate chips and added some oats and peanut butter instead. And they turned out pretty awesome.

Chicken Caprese Salad

I’m currently writing this post on the drive down to Savannah (SO excited for our weekend getaway) but doing this in the car is not easy. And not because I get motion sick or anything.. but because I can’t stand not paying full attention to the road even though I’m not the one driving. As annoying as it is for my husband (he should be used to it by now), I am totally a backseat or passenger, in this case, driver. You could be the best driver in the entire world and I would still want to stare directly at the road in the front of us and warn you of any brake lights ahead or anyone getting over in your lane. It’s just how I am and I can’t help it. So as I’m typing away I am also glancing up every once in a while to warn him of any possibility of danger or to tell him to slow down. And now that I’ve confessed that, you probably never want me to ride in your car, ever. I can understand that.

Go-To Green Smoothie

I debated whether or not to post this. Because, well.. it’s a fairly basic smoothie. I’m pretty sure we all know how to make a smoothie nowadays. Just throw a bunch of different stuff in a blender and there you have it. But this is like my favorite green smoothie that I make almost every morning now. And since I like it so much I just figured I’d go ahead and share it in case anyone else was in search of a solid smoothie recipe. You can obviously change out the fruit and mix it up however you like but I usually stick to the same stuff every morning. It just tastes that good.

Pesto Spaghetti Squash with Roasted Tomatoes

Spaghetti squash is like the best thing ever. I remember the first time I tried it and I knew that moment that I was hooked. It’s very rich and starchy so it’s a perfect replacement for pasta. Something I make on a regular basis for dinner is turkey meatballs with spaghetti squash. Even though it’s probably one of the easiest meals I’ve made it’s definitely one of the best ones. You can basically just throw together what you have in the fridge with some spaghetti squash and chances are it will turn out awesome. I posted another great spaghetti squash recipe a while back if you want to check that one out too. And I’m sure there will be many more to come..

Favorite Breakfast Casserole

Happy Wednesday! I hope you’re having a great week so far. I know I say this in every post but this week is flying by! I think the busier I get and the more things I add to my plate the faster it seems like time goes by. Speaking off adding things to my plate, this breakfast casserole is my favorite.. as you can tell by the name of it. I’ve made it probably a dozen times and it never disappoints. I actually took this recipe from PaleOMG and modified it a little which really just means I added mushrooms, peppers and cheese. I don’t want to take full credit for this since I really didn’t come up with it but I just wanted to be sure I shared it with you because it is a favorite in our house! It’s perfect to throw together when you’ve invited friends or family over for brunch. It’s also perfect for you and your significant other to devour all by yourselves.. I am saying that because we have done that more than once. You’ll understand why when you try it.

Vanilla Scones with Cinnamon Cream Cheese Glaze

I wasn’t kidding when I said I would post some indulgent recipes here and there. I think we all need a little treat every now and then (at least I know I do). I want my blog and recipes to directly align with the kind of food I eat on a regular basis. As I’ve said before, I eat pretty healthy 90% of the time but I am a huge sweets person so I will treat myself to a sweet baked good every now and then. Do you ever watch Parks and Rec? It’s kind of like the ‘treat yo self’ days that Donna and Tom have every now and then. I think we all deserve a ‘treat yo self’ day every now and then. And if you have no idea what show I’m referencing, I highly recommend you go watch it. Now.
